OK you first need American measuring cups... for Americans that is easy.. for UK you can get them from Amazon.co.uk for a few pounds
CARROT CAKE
Sift together:- 1 ½ Cups = c plain flour 1 C sugar 1 tsp baking powder 1 tsp baking soda 1 tsp ground cinnamon 1 tsp salt.
Add:- 2/3 C vegatable oil 2 eggs 1 1/4 C cooked and mashed carrots 1 tsp vanilla ½ C raisins ½ C walnuts nuts
Mix until moistened. Bake in greased and slightly floured 9x9x2 pan at 176°C (350F) for 35 mins. Cool 10 mins. and remove from pan. Top with cream cheese frosting.

200g (Philadelphia) Cream cheese
50g Butter
1C Icing Sugar
